Bowled over!

One of the nice things I’ve found since going vegan is that, in the main, I make much healthier food choices. Yesterday, for example, we went out for lunch and I had a salad platter which consisted of hummus, mushroom pate, lentil salad, coleslaw and a pitta bread. It was absolutely delicious and pretty healthy too! It made me realise though that, once upon a time, I would never have considered something like this for lunch and would probably have chosen a burger and chips or a sandwich and chips (anyone notice a recurring theme of chips?!)

Even when I have visited vegan/ vegetarian cafes in the past, I didn’t necessarily make the best choices. One of my pre-vegan favourite meals was Homity Pie which, if anyone hasn’t tried it, is a delicious blend of pastry, potatoes, cheese and often double cream! It was so good but so bad at the same time.

Yesterday was my ‘cheat’ day so I’m back on it today and have decided to make a black bean burrito bowl for lunch using a recipe from the Skinnytaste book. I haven’t really embraced the ‘bowl’ style of eating yet, even though it seems to be a regular fixture in most vegan recipes books, but this is such a fresh tasting recipe which has so much flavour from all 3 components- lime and coriander rice, sweetcorn and tomato salsa and the black beans themselves. It looks good too, as it contains so many colours, and they do say that you should ‘eat the rainbow’ for maximum health benefits after all. Delicious food like this definitely makes those healthy choices a little bit easier to make! For anyone doing Slimming World, the added bonus is that this recipe is virtually syn free. I used spray oil, but added half a teaspoon of olive oil to the rice, which worked out at half a syn each, but you could easily leave it out altogether. Lose weight without losing any flavour!
